We Just Couldn't Wait....

Our blueberry crop this year isn't going to be the best. The weather has been cold and the rain, although not necessarily sparse, wasn't well timed in the spring for ideal blueberry production!

There are blueberries, but they are sporadic and the bulk of them are still far from ripe.

However, die hard blueberry lovers can still find enough right now to get a fix.

This was our fix this morning -




Well worth the extra time and effort to search through the green berries for a few ripe ones!!

The entire dozen muffins were snapped up in record time!

Thought I'd also share the recipe, since it is the simplest and yummiest blueberry muffin recipe I've ever found!

Blueberry Muffins

1 ¾ cups all purpose flour
3 tsp baking powder
½ tsp salt
¼ cup butter or margarine
½ cup sugar
1 egg
¾ cup milk
1 tsp vanilla
1 cup blueberries, fresh or frozen
1tbsp all purpose flour

Preheat oven to 400.
Mix flour, baking powder, and salt in a large bowl. Make a well in the center.
In another bowl cream butter and sugar. Beat in egg until smooth. Mix in milk and vanilla. Pour into well. Stir just to moisten. Batter will be lumpy.
Stir blueberries with flour. Be gentle. Fold gently into batter. Fill greased muffin cups ¾ full. Bake for 25 minutes until nicely browned.

Karen, you have a real knack for photography- all of your food shots look truly good enough to eat! We have a half decent wild blackberry crop on our property this year-may try this recipe w blackberries....

Sorry you don't have more - we had so much rain this spring and through June that we had tons of berries of all kinds. Wish they would stay fresh until the end of September but maybe I can get a few frozen ones to TN...
